Veggie Sushi W/ ginger sesame portabellas

Ok Ok so I'm already duplicating things and its been under a week. I just had to have sushi tonight. I made sushi rice and added mirin & rice wine vinegar with a bit of sugar. Then to the sushi fillings ... avocado, baked tofu, cashews, portabellas and some ravigote. Ravigote is basically mayo with garlic, capers, lemon juice, S&P.

The verdict was AMAZING. Couldn't find the camera today, but next time for sure.
